NAME OF DISH: MIRÓ’S LONELINESS
This dish is inspired by Miró's travels, his sympathy for the sea and his passion for colour.The "suquet" shows his connection with the sea. The Chinese noodles reflect his desire to get to know other cultures, especially the Asian one.
The right choice of the products is the most important for the preparation. Everything is cooked at a low temperature and the Chinese noodles are fried in the squid’s ink. The doneness gradations are the fundamental part to get a tasty, light and balanced dish.
Finally, on each dish, as in Miró’s pocket, a carob from Mont-roig that connects us with this land.
