NAME OF THE DISH: PORK CHEEK AMONG CAROB AND OLIVE TREES


The dish is intended to be a representation of Joan Miró's painting "Vinyes i oliveres" (Vines and Olive Trees). In the elaboration we emphasize the connection that Miró had with his environment when he settled in the farmhouse, eating and enjoying the products of the land. We introduced a variety of contrasting flavours and textures, the result of the landscape that surrounds us.


Like Miró, who always had a Mont-roig carob in his pocket, the dish is served on a carob flour bed.


NAME OF THE DISH: CAROB CAKE WITH ITS CREAM


It is known that Joan Miró always carried in his pocket a carob that he used to take all over the world to remember his land.


In the elaboration of our cake, the carob totally replaces the cocoa, which has the same taste in the mouth but is a km 0 product of high quality and until recently unknown.


When serving it is decorated with a reduction of liquid cream with the same carob flour. This cake that can be baked all year round.
